It is called "Forks Over Knives" with T. Colin Campbell, Caldwell B. Esselstyn, Jr. and Neal Barnard. This movie has such startling statistics of scientific and clinical proof to support a whole foods plant based diet that it is difficult to ignore. Hippocrates said "Let Food be Thy Medicine." Recent history and studies have proven this to be effective. During WWII after Germany invaded Norway, they exported all cows, pigs and other livestock to feed the troops. Norwegians at that time in history were forced to live on a minimal plant diet to survive. Documented cases of cardio vascular disease dropped significantly. After WWII was over, the Norwegians reverted to their standard diet. The cardio vascular disease numbers increased back to their trends. Casein is the main protein in milk. When fed to mice above a 5% concentration, the mice start to develop tumors. When the amount of casein was reduced to 5%, a reversal took place. It is believed that genes may be influenced by chemicals. Bad cells are influenced by animal protein and proliferate.
Nutrition works together like a Symphony. Food needs to be used as a treatment. Processed foods are unnaturally dense foods. 500 calories of oil does not trigger the stomachs density receptors because it takes up very little room in the stomach. The mechanism of satiation is being fooled. Therefore we can eat more before we trigger the density receptors to signal the brain that we are getting full.
Plant food is rich in fiber which expands when it reaches the stomach; it takes up more room and triggers our receptors which send a message to tell the brain it is full. When we feel full we stop consuming. If we eat foods that are unnaturally dense, yet take up little room, we consume more and more. However, these foods contain little natural nutrients and are fortified to appear healthier.
It is now known through other studies that high levels of calcium=high levels of hip fractures. Animal protein creates metabolic acidosis. Calcium neutralizes the fat from animal protein which actually reduces the amount of calcium actually absorbed. So the more animal protein we consume the more calcium we require to reduce the fat and less actual calcium for health bones and teeth. The reduction of fat introduced into the body can be reduced by consuming low or non fat dairy products. However, the consumption of animal protein (meats) has to also be reduced or it has little effect.
I am not doing justice to what the movie explains much better. I have personally chosen to embark on a 'food modification' journey, am encouraging my staff and now my patients.
